This easy watermelon feta salad recipe strikes a perfect balance between sweet, salty, and tangy flavors. It takes so little effort to put together and is always a show-stopper.

Ingredients
- 3 cups cubed seedless watermelon
- 1 cup finely chopped cucumber, partially peeled with some skin remaining
- 1 small red onion, thinly sliced
- one-half cup fresh mint or basil leaves, coarsely chopped
- 1 cup feta cheese, crumbled
- one-quarter cup olive oil
- 2 tablespoons red wine vinegar
- squeeze of lime
- sea salt
Directions
- Prepare and combine the watermelon, cucumber, and red onion.
- in a small bowl, combine the olive oil and red wine vinegar.
- Chop the fresh herb and set aside.
- Crumble the feta cheese.
- Just before serving, combine the dressing with the watermelon mixture and top with feta, lime and herbs.
- If desired, sprinkle the top with sea salt. Wait until serving to do this or the salt will draw out the juices.
Robin's Tips:
- Prepare the ingredients early in the day of the dinner.
- Keep the watermelon mixture refreigerated until just before serving.
- Add the dressing, feta and herbs.

- Also excellent with grilled chicken, fish or meat
