Everyone knows oil and water don't mix.  However, what happens when you combine a high quality oilive oil with either vodka or gin, shake it vigorously, let it sit for a while and freeze it?  

You'll see what "fat washing" does to improve the smoothness of a martini!

Ingredients

  • 1 full 750ml bottle of a good quality vodka (like Grey Goose) or gin (like Tangueray)
  • one-half cup of high-quality extra Virgin Olive Oil
  • three-quarters cup of dry vermouth
  • 16 dashes Orange Bitters
  • one-quarter cup of filtered water
  • a few pinches of sea salt
  • Castelvetrano olives or whatever olives you favor

Directions

  1. In a large jar with a good cover, combine th bottle of Gin or Vidka and the Extra Virgin Oive Oil.
  2. Shake vigorously for 30 seconds.
  3. Let it sit on the counter anywhere from 5 hours to overight, them place the ar i the freezer for at least 12 hours.
  4. When you remove it from the freezer, scoop out the oil from the top and pour the liquide through a straner and coffe filter into a clean bottle.
  5. To make a batch that serves roughly 8 guiest, combine the vermouth, orange bitters, the water and salt.
  6. Seal the bottle and keep it in the freezer until cocktail time.
  7. Pour directly into pre-chilled martini glasses and garnish with a pick of olives and a small drop of fresh oive oil on top.  No need to shake or measure, just pour!

  • Prosciutto wrapped Melon or Fig skewers
  • Marinated Olives with Citrus and Herbs
  • Smoked Salmon Cucumber Bites
