Colorful, flavorful and easy to prepare, this sheet pan Mediterranean shrimp is ideal for relaxed entertaining. Most of the chopping can be completed ahead, leaving only a few minutes of cooking once the guests arrive.
Roasted vegetables, seasoned shrimp, feta and fresh herbs come together in one pan for a meal that feels generous and festive without requiring hours in the kitchen.

Ingredients
- 1 pound large raw shrimp, peeled and deveined
- 1 cup cherry tomatoes
- 1 red onion, sliced
- 2 cups broccoli
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- juice of 1 lemon
- one-half cup Kalamata olives
- one-half cup crumbled feta cheese
- salt and pepper
- fresh parsley, chopped
Directions
- Preheat oven to 425 degrees, putting the baking sheet in the oven to heat up with the oven.
- Toss tomatoes, onion and broccoli in a bowl along with 2 tablespoons of olive oil.
- Removed the baking sheet and carefully line with parchment paper. Spread the vegetable mix on the paper. Roast for 15 minutes.
- In a bowl, combine the remaining 2 tablespoons of olive oil, garlic, smoked paprika, oregano, lemon juice, olives, and shrimp.
- When the vegetables are ready, add the shrimp mixture and bake 5-8 minutes, depending on size.
- Top the shrimp and vegetables with the feta cheese, a little extra lemon juice , salt and pepper and fresh parsley.
Robin's Tips:
- Chop the vegetables earlier in the day.
- Keep the seasoned shrimp refreigerated until needed
- Add the shrimp only after the vegetables have started roasting.
- Either serve directly from the sheet pan (the parchment paper is a pretty frame) or transfer to a warm platter.
